Choc Chip Cookies with Plum Salt

Makes: about 20 cookies

Ingredients

  • 125g unsalted butter, softened
  • ½ cup brown sugar
  • ¼ cup caster sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ½ cups plain flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 cup dark or milk chocolate chips (or a mix!)
  • A pinch of Olsson’s Sea Salt Flakes, plus extra for topping

Method

  1. Preheat oven to 180°C (fan-forced). Line a baking tray with baking paper.
  2. Cream butter and sugars together until light and fluffy.
  3. Add egg and vanilla, mixing until smooth.
  4. Sift in flour, baking soda, and baking powder. Stir until just combined.
  5. Fold through chocolate chips and a pinch of Olsson’s Sea Salt Flakes.
  6. Scoop tablespoon-sized balls of dough onto your tray, leaving space for spreading.
  7. Sprinkle a few extra salt flakes on top of each cookie — trust us, it’s worth it.
  8. Bake for 10–12 minutes, or until golden around the edges and soft in the middle.
  9. Cool on the tray (if you can wait that long) and enjoy warm with a cuppa.
